There is a moment every July when I walk out to the garden with one basket and come back needing three. The zucchini plants look perfectly innocent in June. By the middle of summer, they are producing faster than any household can reasonably eat, and I am standing at the kitchen counter looking at a pile of squash the size of my forearm, wondering what on earth I am going to do with all of it.
If you are there right now, you are in good company. Zucchini is the most generous vegetable in the garden and also the most overwhelming.
So I put together every way I know to use it. Forty-five recipes, sorted by what you are actually in the mood for — crispy and fried, sweet breads and muffins, real dinners, side dishes, and desserts that hide vegetables so well nobody notices.

At the bottom, I have added how I freeze zucchini so the harvest keeps feeding us in January, when the garden is under two feet of snow, and a loaf of zucchini bread tastes like a small miracle.

This is where I start every year, because crispy zucchini is the only version my whole family agrees on without negotiation. The trick with all of these is the same: salt your zucchini, let it sit fifteen minutes, then squeeze the water out with a clean dish towel. Zucchini is about 95% water, and if you skip that step you get soggy instead of golden. Every single time.

Zucchini bread is the reason I shred and freeze half my harvest. It is forgiving, it freezes beautifully, and it turns a vegetable nobody asked for into something people request by name. I will say this plainly: zucchini brownies are better than regular brownies. The squash disappears completely and leaves behind the fudgiest texture you have ever gotten out of a nine-by-thirteen. Nobody has ever guessed. I have stopped telling people.

How to Freeze Zucchini for Later

Here is the part that actually saves the harvest. You cannot use forty-five recipes’ worth of zucchini in one August. But you can shred and freeze most of it in an afternoon and bake with it all winter.
How I do it:
For baking (bread, muffins, brownies): Shred the zucchini on a box grater or in the food processor — skin on, no peeling. Do not blanch and do not squeeze out the water yet. Measure it into freezer bags in the exact amount your favorite recipe calls for. Mine take two cups, so every bag holds two cups and gets labeled. Press flat, push the air out, freeze stacked. When you thaw it, drain the liquid then and there.
For soups, casseroles and stir-fries: Slice into rounds or half-moons. Blanch for one minute in boiling water, then straight into ice water. Drain well, freeze in a single layer on a sheet pan, then bag once solid so they don’t fuse into a brick.
How long it keeps: Ten to twelve months in a deep freezer. Realistically, mine is gone by March.
The one mistake to avoid: Freezing whole zucchini. It thaws into something with the texture of a wet sponge and there is no recipe that fixes it. Shred it or slice it first, always.
Every year I swear I am going to plant fewer zucchini, and every year I plant the same six hills and end up right back here, standing in the kitchen with a basket I cannot lift. There are worse problems. A freezer full of shredded zucchini in November feels like money in the bank — because it more or less is.
